The Nines hotel in Ayia Napa is seeking a detail-oriented and analytical Food & Beverage Controller to join its team. The F&B Contoller is responsible for monitoring food and beverage costs, controlling stock and inventory, analysing consumption and identifying opportunities to improve profitability while maintaining the hotel's quality standards.

Key Responsibilities

  • Monitor and control food and beverage costs across all hotel outlets

  • Conduct regular stocktaking and verify inventory records against physical stock

  • Monitor food and beverage purchases, deliveries, transfers, consumption and wastage

  • Check supplier invoices, delivery notes, purchase orders and goods received for accuracy

  • Analyse food and beverage costs, gross profit margins and variances against budgets and targets

  • Prepare regular cost-control reports and provide recommendations to management

  • Monitor menu costing, recipe costing, portion control and selling prices in collaboration with the Executive Chef, Bar & Restaurant Manager, Purchasing Manager and other Food & Beverage team

  • Review daily sales reports, voids, discounts, complimentary items and other relevant transactions

  • Ensure that stock movements and inventory transactions are accurately recorded in the relevant systems

  • Identify discrepancies, investigate variances and recommend corrective actions

  • Work closely with the Purchasing, Finance, Executive Chef and Food & Beverage departments to improve cost efficiency

  • Ensure compliance with internal controls, stock management procedures and company policies

  • Assist with budgeting, forecasting and the preparation of monthly financial reports relating to food and beverage operations

Requirements

  • Previous experience in food and beverage cost control

  • Good knowledge of food and beverage costing, stocktaking, inventory management and gross profit analysis

  • Strong numerical, analytical and problem-solving skills

  • Excellent attention to detail and a high level of accuracy

  • Good knowledge of Microsoft Excel and financial reporting

  • Ability to analyse financial data, identify discrepancies and recommend practical solutions

  • Good communication and organisational skills, with the ability to work effectively across departments

  • Very good knowledge of English and Greek languages

  • A proactive, trustworthy and results-oriented approach.
