Fitides Quality Pitta Bread is one of the leading pitta bread manufacturers in Cyprus, supplying both the local and international market. As part of our continuous growth and modernization strategy, we are seeking a highly motivated COO to support the leadership team in improving systems, processes, reporting, and operational efficiency across the organization.
Position Overview
The Chief of Operations will serve as a strategic partner to the CEO and senior management team, overseeing the organisation’s operational effectiveness, driving continuous improvement and cross‑functional alignment through analyzing business performance, working with data, solving problems and implementing new systems and technology. The successful candidate will be expected to lead projects throughout the company and ensure that business objectives are translated into scalable and people‑centred processes. This role is ideal for a person who thrives in dynamic environments, inspires teams to deliver excellence and enjoys building strong operational foundations.
Key Responsibilities
- Analyze existing company processes and identify inefficiencies.
- Develop management reports and dashboards.
- Support management with business insights and performance analysis.
- Lead and coordinate process improvement projects across all departments.
- Lead and optimise day‑to‑day operations across all departments, ensuring efficiency, consistency, and high‑quality output.
- Develop operational strategies that support organisational growth, sustainability, and long‑term performance.
- Implement data‑driven processes, KPIs, and reporting frameworks to monitor performance and drive continuous improvement.
- Design and implement improved workflows and procedures.
- Oversee digital transformation initiatives.
- Support with the implementation of stock control, attendance, and operational systems, ensuring alignment with organisational processes and compliance standards.
- Identify operational risks and implement mitigation plans to safeguard business continuity.
- Lead financial and operational optimisation by overseeing budgeting and forecasting, analysing expenses to identify savings, evaluating cost structures, and driving profitability improvement initiatives.
- Support the company’s international growth by ensuring all product catalogues, presentations, and business proposals contain strong, accurate, and consistently presented information.
- Strengthen cross‑department collaboration and champion a positive organisational culture by fostering accountability, engagement and professional development while ensuring company procedures and policies are aligned with strategic goals and clearly established and documented.
- Support ISO, quality, and organizational development initiatives.
- Lead organisational transformation by driving digitalisation, AI adoption, process redesign, and automation initiatives while supporting departments in implementing modern tools and best practices that enhance productivity and decision‑making.
Qualifications & Experience
Essential
- University degree in Business Administration, Engineering, Economics, Data Analytics, Information Systems, or a related field.
- Proven experience in a senior operations leadership role (COO, Operations Director, Head of Operations, or similar).
- Demonstrated ability to lead diverse teams, manage multiple complex projects simultaneously, and multi‑department environments.
- Strong background in organisational management, strategic planning, and operational optimisation.
- A people‑centric leadership style that balances structure with empathy and adaptability.
- Excellent analytical, decision‑making, and problem‑solving skills.
- Exceptional communication skills with the ability to influence at all levels.
- Strong command of English and Greek.
- Advanced Excel skills.

- Experience with Power BI, Power Query, or similar reporting tools.
- Experience with ERP systems and AI tools.
- Experience in manufacturing, FMCG, logistics, or operations environments.
